MANGO - PULP

About Mango
Mango (Mangifera indica) is the most popular and delicious fruit of subcontinent and now is rapidly gaining the popularity all over the world. It is also known as the “King of the fruits”. It is a native of sub continent and also grown in tropical and sub tropical countries like India, Thailand, Philippines, Ecuador, Brazil, China, etc. Best quality mangoes are grown in Pakistan. Chaunsa and Sindhri of Pakistan are even the finest among them. Chaunsa is cultivated mostly in the province of Punjab while Sindhri in the province of Snidh. Chaunsa is extremely sweet having sugars up to 28%. Sindhri is comparatively less sweet with more or less 20% sugars. Mangoes contain high fiber contents and are low in calories and contain a small amount of carbohydrates, calcium, iron, potassium and a little protein; they are rich in vitamins A, B and C and also contain other antioxidant vitamins. Mangoes have more carotenoids than most other fruits and that helps word off colds and reduces the risk of cancer and heart disease
About Mango Pulp
Most of the mango produced in Pakistan is consumed as fresh yet a considerable quantity is processed in to a fine pulp & puree. Mango pulp & puree is now gaining popularity in fruits pulp market of the world due to its superb taste, flavor, aroma and very fine creamy texture.
The Use
The major use of mango pulp is in the production of juices and nectars. It is also used for the production of ice creams, toppings, bakery products and jams. It can be repacked as sweetened or single strength pulp in smaller consumer packs and can be consumed as it is or mixed with milk cheese yogurt. It can also be used in mango shake and mango lassi which is a popular drink all over the world.

GUAVA - PULP

Guava Pulp is used mainly for conversion to juices, nectars, drinks, jams, fruit cheese and fruit bars. Guava juice is an excellent beverage, which makes a very tasty and nutritious drink. It can also be used in puddings, bakery fillings, fruit meals for children and to flavour delicious ice creams, yoghurt and confectionery. The exotic aroma of the product makes it suitable for blending with mango pulp of other kinds of beverages.
A BRIEF LOOK AT GUAVA PULP PRODUCTION:
1st-Sorting:
Guavas are sorted before placed for washing.
1st-Washing:
Fully ripened, firm and sound Guavas are first washed in washer for elimination of mud, leaves and other foreign particles.
2nd-Sorting:
After washing Guavas are again sorted on the sorting conveyor where decayed parts are trimmed off with the sharp knives.
2nd-Washing:
Sorted Guavas then pass through a brusher, where rotating nylon brushes remove all external impurities and at the same time shower washing makes Guavas perfectly clean.
Chopping:
By means of an elevator, Guavas are fed into the chopper to prepare a creamy mesh.
Thermo-Break:
Heat treatment is given to the pulp to soften the tissues, minimize microbial load & enzymatic activities.
Refining:
The pulp is transferred to the super creamers where it is passed first through refiner and then super refiner to separate the seed and other particles, giving it a very fine homogeneous creamy texture.
Deairation:
The refined pulp is then fed into the mixing tanks and transferred to the Deairator for the removal of air.
Sterilization:
The pulp is then treated with thermal-shock in the Sterilizer where almost all the microorganisms get killed and a state of complete sterility is achieved. Following the application of heat the product is immediately cooled down to prevent any kind of browning reactions.
Aseptic Filling:
The cool and sterilized Guava pulp now enters in to the highly sophisticated aseptic filler where it is filled in 210 kg 4 layer aseptic bag packed in steel drum.

APPLE - CONCENTRATES

Concentrated apple juice prepared by concentrating unfermented juice of clear, mature, sound apples or apple parts.
A BRIEF LOOK AT APPLE CONCENTRATE PRODUCTION:
1st-Sorting:
Apples are sorted before putting for washing.
1st-Washing:
Fully ripened, firm and sound apples are first washed in washer for elimination of mud, leaves and other foreign particles.

Milling:

Pre-Heating:
Heat treatment is given to the mesh to facilitate juice extraction.
Belt Press:
Meshed pulp is then pressed for juice extraction.
Pasturization:
Heat treatment is given to the mesh to minimize microbial load & control enzymatic activities.
Calrification:
This process is done for the removal of Pectin and starch from the mesh.
Vaccum Filteration:
Calified juice is filtered for any particle present.
Ultra Filtration:
Micro particles are removed to obtain highly calrified apple juice.
Evaporation:
This is done for the removal of water content from the juice to get concentrate.
Deairation:
The concentrate is transferred to the deairator for the removal of air.
Sterilization:
